Frequently asked questions
Espresso or filter?
Honestly — both. Pulls a beautifully crema-rich double shot at 18g in, 36g out, 28-32 seconds. As V60 it makes a comforting chocolate-toned cup that's the easiest of our line to dial in. If you have to pick one bean for the household, this is it.
Will it work with milk drinks?
Yes — the chocolate + almond notes lift through milk without turning bitter. The default cappuccino base at the Kohi bar.
How does natural process change the flavour?
Natural process dries the bean inside the fruit — so the bean absorbs more fruit-sugar character during drying. Result: more body, more sweetness, less acidity than washed. For chocolate-toned origins like Brazil, natural is the right call.
Recommended grind for espresso?
Around 12-14 on a Eureka Mignon, clicks 8-11 on a Comandante. Aim for 28-32 seconds for a 1:2 ratio (18g in → 36g out). If it pulls too fast, grind finer; too slow + sour, grind coarser.
Why is it cheaper than Yirgacheffe?
Brazilian green-bean prices are lower than Ethiopian micro-lots — natural-process Cerrado is one of the world's most efficient supply chains, and Familia Coelho passes that efficiency through. Same care in the roast, lower green-bean cost.
