    Grass-fed Argentinian beef flown weekly from partner ranches in La Pampa + Buenos Aires province. Cuts inspected by Chef Daniel before they leave the airport.

    28-45 days

    Five cuts dry-aged in-house in our temperature-controlled chamber — 28 to 45 days depending on the cut. Visible from the dining room.

  3. Grill

    À la minute

    Charcoal-grilled over imported quebracho wood — the same hardwood used in traditional Argentine parrilla. Open flame, no gas.

  4. Pair

    2h experience

    Sommelier pairs every cut from our 120+ bottle Argentine + Old World cellar. Two-hour dinner, no rushed turns.

Why Cabernet from Argentina?

Mendoza Cab is criminally underrated — same high-altitude estate fruit that makes Malbec work, structured the way Bordeaux Cab is. Half the price of California Cab; arguably better value than entry-level Bordeaux. Our sommelier's value pick.

Decanting?

Optional — the 2020 is approachable now but improves with 30 minutes in a decanter. We open and pour without ceremony unless you ask for a full decant.

Best steak pairing?

Picanha or the dry-aged ribeye. The Cab's grip matches the picanha's fat-cap richness; the cedar notes complement the dry-age. Less ideal with tenderloin (too austere).
