Frequently asked questions
Is Thai coffee actually good?
Specialty Thai arabica from high-altitude Chiang Mai farms (Doi Chaang, Doi Tung, Mae Hong Son) is legitimately world-class. The myth that 'Thailand grows robusta' is decades out of date — Doi Chaang has been cupping into the 84-86 range consistently for a decade.
Honey process — what does that mean?
The fruit pulp is removed but the mucilage (the sticky 'honey' layer on the bean) is left on during drying. Result: more sweetness than washed, less fermenty character than natural — a sweet spot for Thai beans where natural can get too tropical.
How does it compare to Ethiopian?
Doi Chaang is sweeter and rounder; Yirgacheffe is brighter and more floral. Side by side they tell completely different stories. We rotate them on the bar so people can taste both within a week.
Can I visit Doi Chaang?
Yes — Doi Chaang cooperative runs farm tours November-February (peak harvest). About 3 hours' drive from Chiang Mai city. We can introduce you to our contacts there if you're planning a trip.
