What's dulce de leche?
Sweetened milk slowly reduced over hours until it caramelises into a thick toffee-coloured spread. The Argentine + Uruguayan kitchen builds half its desserts around it. We make ours in-house from whole milk + sugar, no cans.
Is it gluten-free?
Yes — flan is a custard set with eggs + milk + sugar, no flour. Coeliac-safe. Watch for cross-contamination only if you're at the bar where bread is served.
Wine pairing?
Late-harvest Torrontés (Argentine sweet white) is the textbook pairing. Or a glass of aged port if you prefer fortified. Espresso also works.
