Sourced via Trabocca from the Idido cooperative in Yirgacheffe, southern Ethiopia. Washed process, drying tables, fully traceable to lot. Cupped at 87.5 — jasmine and bergamot on the front, lemon-zest acidity, and a clean black-tea finish that lingers. We roast it light (City+) to keep the origin character front and centre; sings on V60 or AeroPress, surprisingly drinkable as filter espresso. Grind on request. We strongly recommend whole bean.

Frequently asked questions

Why is washed Yirgacheffe so floral?

Washed process strips the fruit mucilage off the bean before drying — that leaves the cup tasting of the bean itself, not the fruit it grew in. Yirgacheffe's terroir + the Heirloom varietals produce those jasmine + bergamot notes naturally; washing reveals them.

Is it good for espresso?

It works as 'filter espresso' on lever / pressure-profiled machines — long pre-infusion, low pressure. On a standard 9-bar pump espresso it's a bit thin without milk. For traditional espresso pull, our Signature Blend is the better choice.

What grind for V60?

Medium-fine — table-sugar feel. On a Comandante C40 that's around clicks 20-22; Hario Skerton fine is too coarse. Aim for a 3:00-3:30 total brew time on a 15g:225g recipe.

Best brewer if I don't have V60?

Aeropress (inverted, 85°C, 90s steep), Kalita Wave (similar recipe to V60 but more forgiving), or Chemex if you have one. Avoid French press for this bean — it muddies the florals.

How long does the flavour hold?

Peak flavour 5-21 days post-roast. Drink within 4 weeks of roast date for best results; the bag is shelf-stable until then. After 4 weeks the aromatics start dropping noticeably.
